fluffy vegan pancakes


classic pancakes


A childhood favourite turned vegan!


  • 1 cup flour(125 g)

  • 2 tablespoons organic sugar

  • 1 tablespoon baking powder

  • ½ teaspoon salt

  • 1 cup non-dairy milk(240 mL)

  • 1 tablespoon apple cider vinegar

  • 1 teaspoon vanilla

  • maple syrup, to serve



1. In a large bowl add the flour, sugar, baking powder, and salt. Use a spatula to slowly mix the dry ingredients. 

2. In a separate bowl, add the non-dairy milk (I used almond milk), apple cider, and vanilla and whisk together gently. 

3. Pour the liquid ingredients previously mixed into the dry ingredients and whisk together. 

4. Let the batter rest for five minutes, and cover it up using a towel. 

5. Heat up a small pan and melt some butter over it, making it less sticky. 

6. Generously add some butter to the pan, to your liking. Let it heat until bubbles appear on the surface of the 'pancake' when bubbles form flip over. (This is a very important trick to know to create a perfect pancake) 

7. Serve with your choice of toppings. I used bananas and strawberries. 

8. Lastly, generously add some maple syrup!
